OVERVIEW

The 2007 Mobil Four Star Spago opened at the Four Seasons Resort Maui in 2001, teaming America’s greatest chef with the world’s finest hotel group. The Asian-inspired contemporary design is crafted with unique stone, wood, exotic sea anemone murals and custom glass that frames spectacular views of the Maui coastline and neighboring islands. The room is sophisticated, yet relaxed, with carefully selected furnishings that provide both family comfort and romantic evenings both indoors or on the exterior lanai. All this creates the perfect stage for Chef Cameron Lewark’s brilliant menu, using Hawaii’s premier produce, fish and meats, with the styling that made Spago famous. CUISINE

Spago utilizes only the finest ingredients available from the Hawaiian Islands. Chef Cameron Lewark presents a fusion of Hawaiian and California cuisine, embracing the tradition of the Islands culinary techniques. This inspired menu offers Wolfgang Puck's classics and many locally inspired dishes including the Hana Hearts of Palm Salad, Hawaiian Style Ceviche of Opakapaka, Pan-Roasted Uku with Lobster Sauce Americaine and Hawaii’s best Caramelized Pork Chop with Lomi Lomi Tomatoes. A wonderful children’s menu is available nightly to make the dining experience satisfying for the entire family.
